Sandwich biscuits (Saint Valentine's Day)

These biscuits are perfect for the breakfast on the Saint Valentine's Day! Cook them for your lover... 

Difficult: low
Cooking time: 14 minutes
Preparation time: 1 hour and 15 minutes
Add time: 30 minutes (into the fridge)

Ingredients (for 24 biscuits):
250 g of flour 00’;
200 g of rice flour or cornstarch or potato flour;
200 g of almond flour;
250 g of sugar;
A little bit of salt;
2 eggs;
Red food coloring (uncompulsory);
250 g of butter;
For stuffing
Strawberry jam;
10 ml of milk;
100 g of dark or white chocolate.

Sift the flour 00' and the rice flour in a bowl with a little bit of salt. Add the butter and the sugar, than mix with a wood spoon up to get a soft cream. Add some drop of the red coloring and the almond flour. Put the eggs (1) in the bowl and mix again. Make a ball and cover it with a paper of pellicle and put it into the fridge for 30 minutes. Dissolve the chocolate with the bain-marie metod (2). Form some small hearts with the mixture, than bake at 180°C for 14 minutes. Let them make colder, then stuff them in couple with the jam inside (3) and the chocolate in surface.  

Conservation: conserve them in a dry and cool place, finish them in a few day.
